Ingredient

5~7people

35 Vanna Mei shrimp (Ecuador)

2pieces of garlic

About 10gof Ginger

4Large spoon of ketchup

1Large spoon of white sugar

200㏄ of water

100㏄ of cooking sake

2 tea spoon of Chili Bean Sauce

2 Large spoon of ketchup

Salt       Adequate amount

Pepper   Adequate amount

   

2Large spoon of starch

500㏄ of water

Ingrediencies for shrimp oil:

50㏄ of cooking sake

100 ㏄ of salad oil

35 shrimp shells

100㏄ of water

1table salt of salt

Pepper   Adequate amount

Ajinomoto  Adequate amount

How to make

  • Peal the shells off the shrimps and check there is no lateral line.
  • Put the shrimps into a bowl with 2Large spoon of starch and wash the shrimps and  get rid of the grey water until becomes clean.
  •  Wipe off the water from the shrimps with paper towel and stir fry them.
  • Grind the 2 pieces of garlic and 10g of ginger. Stir fry them 2 spoonsful of Chili Bean Sauce.
  • Add 200㏄of water and 100ccof white sugar and make the sauce.
  • (To make Shrimp oil)
  • Add 50cc of cooking sake, 100cc of salad oil, 100cc of water to the shrimp shells and stir fry them with one table spoon of salt and add adequate amount of pepper and Ajinomoto to make shrimp oil.
  • Mix the shrimp, sauce and shrimp oil and boil thoroughly.
  • Adjust the taste with salt and pepper.
  • Add the starch with water and simmer.

Point in check

Vanna Mei shrimp are small and turns hard if you overcook them. Make sure the

lateral line of the shrimp is removed. The Chili Bean Sauce is quite hot when it is fresh. Make sure to taste the sauce when adjusting. The grey water comes when the shrimps are washed with starch. Make sure the water is not grey after washing the shrimps for 2or 3 times with the starch.  After whipping off the water with paper towel stir fry them lightly. After adding the sauce with shrimp oil, together with the shrimp, adjust the taste by checking it. Add white sugar if it is not sweet enough.

Personal Comments

Sometimes, the sauce will not be too hot, after stir frying them with ginger and garlic.

Also, make sure the sauce will not be too sweet adding ketchup and white sugar.

By adding cooking wine to the shrimps and stir frying them, make sure the taste of the shrimps is used to enrich the taste. The shrimp oil adds an extra flavor to the dish. Not only it is important not to make it too sweet or hot, it is also important not to add too much fresh garlic or ginger.
